Now normally the day starts around 6:00 am.  This allows plenty of time before the baby wakes up to make myself look like a woman and not a sweat pant clad, pony tail donning, "is that a man or a woman" question mark.  I get his breakfast ready, which is usually sizable; 2 eggs scrambled, fresh orange juice, 1/2 a piece of toast with peanut butter, some fruit or avocado and sometimes even a cookie afterwards (I am sure this seems like a lot but if you were to see him you would wonder where it is all hiding) finish the dishes from the previous night and just get organized.  However, this morning, since the above described activity took place at 4:00 am, here I sit in my sweatpants, wearing a pony tail high in my head hoping that no one comes to my door for fear of scaring them, recounting the mornings chaos and laughing to myself.  I love my alone time but cherish the time I get to spend with my children, especially when they wake from their sleep to spend time with me.  Motherhood is a blessing, a funny, dirty (and I mention this because after one day in daycare my son has the never ending snot drip of green boogers so sticky they could hold bricks to the ceiling), surprising gift.  And what a blessing little babies and small children are not afraid of sweat pants.
 

So, today it is going to reach the high 60’s low 70’s After having the fireplace burning and slippers on my feet for so long I have an overwhelming urge to go dig in the dirt.  Writing this blog I had a Carrie Bradshaw moment and thought: What can I do to make this Spring better than last year?

I have to admit that at this time last year I was a new mommy and in recovery mode.  I had adopted the Raw Food way of eating completely by accident having only enough time to throw some fruit and veggies into a blender as a meal and was trying to catch some sleep any chance I could. I think Spring past me by without me even taking notice.  Now that the baby is over a year and walking everywhere it is time to get outside and do something.  Maybe it is the year of planting a garden, setting out hummingbird feeders, or something as simple as cleaning out my shoe closet.  What are your plans?

I can say one thing, look for fresh recipes in the upcoming months and hopefully some fun projects to do outdoors. 

1T extra virgin olive oil
1 medium red onion – finely chopped
1 medium green bell pepper – finely chopped
1/2c chopped celery
3 cloves of garlic – minced
2T fresh ginger – peeled and minced
1T curry powder
2 large tomatoes – peeled, seeded and chopped
1 bay leaf
4c fat-free, low-sodium chicken or vegetable broth (the "low-sodium" is very important, be sure to check the label)
3T creamy or crunchy natural almond butter
1 1/2 c soybeans (edemame)  – cooked and dried
1/4c fresh cilantro – chopped
1/2lb baby spinach leaves torn into bite sized pieces
Salt and Pepper to taste.

1. 1. Heat olive oil in a 4-qt saucepan or Dutch oven over medium heat.  Add onoin, bell pepper and celery and saute until soft and translucent, about 5 minutes
2. 2. Add garlic, ginger and curry powder and saute until fragrant; do not brown the garlic.  Add the tomatoes and bay leaf and cook, uncovered intil tomoatoes are slightly reduced, about 3 minutes.
3. 3. Ass the brother and bring the mixture to a boil.  Reduce heat to low and whick in almond butter until blended.  Add soybeans (edemame) and cook until heated through, about 2 minutes.  Stirin cilantro and spinach.  Season with salt and pepper.
